The quality is decided underneath. Composite needs tighter joist spacing than wood, tighter again on a diagonal layout. If a bid does not mention reframing, ask what spacing they are building to.
Demolition and haul-away of the existing structure are included, and you get a written itemised price you can compare line by line against other bids.
